Pancake Saturday recipe

A recently instigated tradition in our house is Pancake Saturdays. There's nothing better than a lazy Saturday morning in your PJ's eating a special breakfast. It's taken me a few weeks to perfect my pancake recipe but here it is finally....

Perfect American Style Pancakes

1 cup self raising flour
1-2 tablespoons sugar
1/4 teaspoon salt
1/2 teaspoon bicarbonate of soda
1 cup milk
1 large egg
1 tablespoon vegetable oil or melted butter
a few drops of vanilla essence

Step 1: Whisk together all the wet ingredients.

Step 2: In a separate bowl mix together all the dry ingredients.

Step 3: Add the dry ingredients to the wet ingredients and mix until just wet - don't worry if it looks lumpy, it's supposed to.

Step 4: Melt some butter in a pan and put a spoonful or two of batter into the pan for each pancake. In the meantime, put a baking tray in the oven to keep the cooked pancakes on to keep warm while you cook more.

Step 5: Once the pancakes are golden on both sides they're done and ready to eat.

Step 6: Serve with frozen berries (defrosted first of course), sliced bananas and plenty of syrup.
